Coconut Bar with a Nutty Twist
This delicious low sugar 'Bounty' bar is great for a treat so you don’t feel deprived. It's high in fats to satiate you and give good brain energy but it's quite rich so try not to eat too much! (We know that's difficult, it's sooo goood!)
Ingredients
FILLING
- 3 cups (270g) of desiccated coconut 
- 1/4 cup (55g) coconut oil 
- 1/2 cup (120ml) coconut cream 
- 1 tbsp honey 
- 1 tbsp vanilla powder or extract 
- 2 tbsps smooth peanut butter 
 
COATING
- ½ cup carob 
- ¾ cup (165g) coconut oil or ½ cup (110g) cacao butter 
Method
FILLING
- Mix the dry ingredients 
- Melt the coconut oil and honey and stir into the dry ingredients 
- Pour in the coconut cream and mix well 
- Press the filling into a glass dish or tray 
- Put in the freezer until it hardens (approx 30 mins) 
- Remove from freezer and spread the peanut butter thinly over the filling 
- Put back in the freezer until it hardens (approx 30 mins) 
COATING
- Melt the coconut oil or cacao butter 
- Whisk in the carob powder until there are no lumps 
- Allow to cool to room temperature 
- Remove filling from freezer and pour over coating 
- Return to freezer until it hardens (approx 30 mins) 
- Cut into squares or bars and enjoy!
