Granny Pringle’s Oat Cookies

Ingredients

120g or 1 cup gluten free self-raising flour (or add 1 ½ tsp baking powder to plain flour)     
120g or 1 1/2 cups oats
50g or 1/4 cup sugar                            
1 tbs maple syrup
160g or 3/4 cup goats butter (or coconut oil)
½ tsp bicarb

Method

  • Melt butter

  • Add sugar (& syrup)

  • Add bicarb

  • Combine all ingredients

  • Roll into balls (size of walnut  - about 24)

  • Flatten with fork onto two oiled trays

  • Medium oven for 15 mins

Alterations

I am a huge fan of playing with ingredients to suit your fancy.  You could add cinnamon, ginger, sultanas, chocolate chip – give it a go – get creative! Just write it down somewhere so you remember what works and what doesn’t

You can also:

  • Add more oats and less flour according to taste. Sometimes I pretty much only use oats, but just make sure what ever you take out in quantity of flour you add back in with oats.

  • Leave out the syrup completely – it can make the biscuits slightly more crispy if you leave it in, but not much.

  • Try coconut butter rather than goats butter
